Our yard is a little swampy but I will take it if it means spring is on it's way. <BR/>About your cookies, did you use 2 egg whites to replace your 2 eggs? If so, you may not have had enough liquid/egg. You figure that a large egg is about 2 oz with the yolk being just under 1 oz and the white being just over 1 oz. To use the whites to replace eggs you should probably use 3-4. That may have been the problem or there may have been too much flour or not enough sugar, but my bet is the egg proportion was a little off. <BR/>About the green beans, also a Madgwick favorite, I simmer them for a few minutes in water and then finish them in a saute pan with a little garlic, olive oil, salt and pepper.
