I've gotten to be an expert at beans since I became a vegetarian and they have become a large part of my diet. My favorite way to cook them is in the pressure cooker. Takes 20 minutes. Then I put them in a food processor with salt, garlic, chili powder, cumin, and a little oil. Yummy!
I also cook up several large pots a month and divide them into ziplocks and freeze them. Then whenever I cook anything that calls for a can of beans, wala!
Very easy! I use 1/2 chicken broth 1/2 water and add a chopped onion, garlic, salt and pepper right in the crock pot (I used to add about 4 strips of chopped bacon too, but pork is not my friend these days). I cook mine for about 30 hours and they come out perfectly seasoned. We either eat them straight out of the crock pot with cornbread or in any recipe that calls for beans. They mash nicely with a simple potato masher, too :)
