Tomato Sauce

The garden had a great year, even through all of the neglect it just kept producing. I would go out, pick a basket full of tomatoes, and then be scared to go back out for a couple of days, repeat. Melanie pointed me to this tutorial on how to make tomato sauce, and I did several batches, right up to the freeze, and now I'm done.

I love this tutorial because it is so easy. Cut up the tomatoes, then throw them in the blender-no peeling, no seeding. She promises you can't tell.

Then cook it down in a big pot. For this I think it would be better to have a bigger big pot than I have. It wouldn't take so many batches that way.

Then put it into jars and a hot water bath for 25-30 minutes and you're done! I made 7 so far, but I have the last of the red tomatoes on the stove now, probably two more.

For next year, I'd like to find a recipe so that I could make it spaghetti sauce, and can it that way. We eat lots of Prego.

Mrs Wages has a spaghetti sauce packet. It's great. That's what I used this year. Pretty much do what you just did, only add in the packet. Only I did blanch and peel mine. But it was super easy and it's super tasty!

I just threw in the spices it called for in a marinara recipe from a cookbook. Good job!
