Peanut Butter Challenge

This summer this giant tub of peanut butter showed up in my house. (You know how it is with big parties)
Of the 6 lbs, about a cup had been used.


I don't think you can read it, but it says "Best by November 2011". That's my kind of challenge.
We made about 200 of these cookies, and they were tasty, but that didn't use nearly enough.

So we started making corn flake cookies, a Grandma Anna staple. So yummy and easy.

We've tried 4 different recipes. (I need to just find Grandma Anna's recipe-I'm sure someone has it). This one is pretty good-but increase the corn flakes to 6 cups at least.



A couple more batches... I think we're going to make it!

That sure is a lot of peanut butter. :)
Mom's recipe for these cookies is
1/2 c sugar
1/2 c dark corn syrup
3/4 c peanut butter
1 t vanilla
3 c corn flakes or Special K

Boil sugar and syrup together until sugar dissolves. Remove from heat and stir in peanut butter and vanilla mix in cereal and scoop. They are a favorite around here.

It wouldn't use a lot, but you can make chicken skewers with peanut satay dipping sauce. Peanut butter, dash of soy, little fresh ginger, chili paste... add a little at a time and taste. It's SOOO gooooood. You can use the same recipe and toss it with noodles for Thai peanut noodles.

My recipe for these is pretty similar: add vanilla and decrease the corn syrup.

fast, easy, and kind of like Reeses. I seriously depleted our PB making these this summer. :)

Any time I've tried to make "food" with peanut butter it ends up tasting like I just put PB in the stir fry. Not good. I don't know what my trouble is. I have about a half a cup left though, so maybe I could give it another try?
